Gir Kesar grows in a narrow band of Gujarat where the forest meets the farmland — volcanic soil, hard summer light, and the sea close enough to soften the nights. It is the only place this fruit tastes the way it does, which is why the Geographical Indication exists and why we have never planted anywhere else.
Older than the company that sells them.
Most of our canopy was planted by the previous generation. A Kesar tree takes seven years before it gives anything worth selling and forty before it gives its best, so nothing here is planted for this season. It is planted for a grandchild.
Nine families, paid before the fruit moves.
We buy from named growers in Talala at a price agreed before the harvest, not after the market has decided what they are worth. Their names go on the crate, because the crate is theirs as much as ours.
One day, decided by the fruit.
A Kesar tells you it is ready by the shoulder above the stem, the smell at the stalk, and nothing else. We pick by hand on that day, wrap each fruit, and it leaves the orchard the same evening. There is no cold chain long enough to fix a mango picked early.
